Diabetes Recipes For Your Main Course

¼ cup green onions, chopped and low-sodium teriyaki sauce
½ cup chopped water chestnuts
1 lb beef flank steak
Salt and pepper to tasteTake the spinach stems out and layering the leaves on each other, cut them diagonally into thin strips. Mix the strips, onions, water chestnuts and teriyaki sauce. Trim the fat from the meat and make shallow 1-inch cuts on each piece.Place the steaks in between 2 pieces of plastic wrap and pound with a light hand so as to make small rectangles of them. After taking them out of the wrap, coat the meat with seasoning. Then spread the spinach mixture as well. Roll each meat piece and secure them with toothpicks. Slice in between the toothpicks to get 1″ thin slices. Thread these slices into metal skewers, brush them with teriyaki sauce and grill till done.Lemon Pepper Steaks2 boneless beef loin steaks, cut into 1″ thick pieces
1 tsp garlic, minced
1 tbsp oregano, crushed
¼ tsp ground pepper
1 tsp lemon peel, shredded
1 tsp cooking oilTake away the fat from the meat. Mix the other ingredients and coat it evenly on both sides of the steaks. You can either charcoal grill or gas grill the steaks. Grill slowly on low flame for 15-18 minutes, depending upon how you want your steaks done, turning them once they are done halfway. You could cut the meat into thin strips, across the grain, before serving them.In order to broil them, you can place the meat on an unheated rack of a broiler pan. You could turn them once they are halfway done and turn and cook them until done.Orange-Glazed Pork Chops4 boneless ¾” pork loin chops
¼ cup sugar-free orange marmalade
2 tsp Dijon mustard
¼ tsp Cayenne pepper
1 tsp lemon juice
Salt and pepper to tasteMix all the ingredients except the chops and seasoning together in a bowl. Trim the fat from the meat and sprinkle them on either side with seasoning.
